Rinds from 11 lemons. Exclude as much pith as possible.
Squeeze into the jar the juice ffrom the peeled lemons.
Add 1 liter pure grain alcohol
Ready to store for 30 days, giving it a good shake daily.

Strain the juice.
Squueze remaining juice out of the rinds.
Add 2 cups organic cane sugar. Stir very well. If not making cream limoncello, store in cool, dark place for one week, shaking well once a day.
If making cream limoncello, add 4 1/2 cups heavy cream. Mix well and store in frig for one week. Stir well once a day.
At the start of the five week wait period.
At the end of the five week wait period. Ready to enjoy.
